Homemade Granola

2 Cups Oats

2 Cups Nuts/Fruit

3 Tbsp Oil (Olive, Coconut, Grapeseed)

3 Tbsp Honey (or Maple Syrup)

2 tsp Cinnamon

2 tsp Vanilla

1/4 tsp Salt

350 degrees for 11-14 minutes. 

Directions:

Preheat the oven to 350. Combine the oats, nuts and fruit in bowl. Any "soft" dried fruit, like apricots or raisins, can be added after the granola has been baked. In a small sauce pan, heat oil, honey, and spices over low heat until mixed well (about 3-5 minutes). Pour over the oats/nuts mix and make sure it's all coated. Spread onto a rimmed baking sheet. Bake for 11-14 minutes, watching closely so it doesn't burn (it can burn really fast). Mix around and let cool on baking sheet. Store in an air tight container for up to a week. (It might last longer than a week, but it's always gone before we can find out.)

Measure it all in one bowl. Fast and easy.

Everything is mixed and ready to bake. 

Ready for yogurt!

Notes:

If you have a big glass measuring bowl, it makes this recipe really easy. You can add the oats up to the 2 cup line, then add the rest until you get to the 4 cup line. The recipe is very forgiving, so don't worry about being exact with the oats and nuts/fruit.

You can use any combination of nuts and fruit depending on what you like or what you have around the house. My favorite combo right now is cashews, pecans, and coconut flakes. You can also use any combination of spices that you like too, adjusting the amount to your liking. Nutmeg, ginger, rosemary? Get creative!
