Cauliflower Pizza Crust
This is not my own recipe, but I thought I would still document how it turned out and my thoughts and process along the way. I got this recipe from Detoxinista, which is one of my go to blogs for clean, whole food eating.
I've made this recipe twice now. The first time seemed a little daunting and I didn't think I would make it again. But, with a few adjustments, the second time felt much less time consuming. The key for me: The first time I made it I tried to do it all at once. This time, I started early and let it be a leisurely Sunday afternoon thing, in between playing with my little. (Cut and wash the cauliflower. Play. Make the rice. Play and Read. Cook the rice. Play. And so on...)

Ingredients:
4 cups raw cauliflower rice
1 egg, beaten
1/3 cup soft goat cheese (chevre)
1 teaspoon dried oregano
pinch of salt
My notes:
I don't have a food processor, so I used our Vitamix to make the cauliflower rice. It worked great! I had to do a couple small batches, but it still did the trick. Also, I microwaved the "rice" instead of doing the quick boil. This seemed like a huge time saver to me, even though it probably only saved me a few minutes. To microwave: put the cauliflower rice in a shallow bowl with a wet paper towel on top. Cook for about 4 minutes, stirring half way through.
This is what mine looked like after squeezing out all of the water. Don't skip this step! You'll be amazed at how much water is in the cauliflower.
This is what it looked like after mixing all the ingredients. You might not think so at this step, but I promise it turns out great!
